An easy side dish :: Creamy Tomato, Cucumber and Onion Salad

I found this to be an easy side dish for summer meats, like ribs or Grilled Greek Chicken. Doesn't take long and all you need are some tomatoes, cucumbers and red onions! It is pretty and crunchy and creamy at the same time.

Here's the recipe. Enjoy. You can adjust the amounts of veggies to fit your people.

Ingredients

  • 1/3 cup Greek Yogurt

  • 1/4 cup mayonnaise

  • 1 tablespoon fresh dill, minced or 1 tsp dried dill

  • 1/4 tsp garlic powder

  • 2 cups (approximately) cherry tomatoes; Measure tomatoes then cut tomatoes in half

  • 2 medium cucumbers- slice cucumbers in half, then thinly slice. Next cut slices into quarters.

  • 1/2 medium red onion thinly sliced

  • Salt and Pepper to taste

  • You can add more of any veggie or less...

Instructions

  1. In large bowl, stir together yogurt, mayo, dill and garlic powder

  2. Add tomatoes, cucumbers and onions and gently stir

  3. Season with salt and pepper
