Cauliflower Soup
Here is a great soup for any evening or a lunch. Doesn't take long to prepare. No funky ingredients. Super smooth and yummy.
Don't forget to drizzle with the olive oil at the end- makes it look so elegant.
Ingredients
1 head cauliflower
1 large onion, sliced
1 stick of butter, divided use
1 bay leaf
1 tsp nutmeg
1 tsp each of salt and pepper
4 cups water
Olive oil, for drizzling
Instructions
Chop cauliflower into 1-inch pieces
Melt half the butter in a saucepan
Stir in onions and sauté until translucent, about 5 minutes
Add chopped cauliflower, bay leaf, nutmeg and salt and pepper
Sauté until spices are aromatic
Pour in enough water to just cover cauliflower.
Simmer until cauliflower is fork-tender, about 20 minutes
Discard bay leaf.
Use a blender or food processor to puree everything in the pot, adding remaining butter
Simmer soup to thicken and season with S&P to taste
Ladle soup into 4 bowls and drizzle with Olive Oil
