Coconut-Black Bean Rice is a Perfect Side Dish
What to serve with your chicken? Sometime we just need an easy recipe for a side dish. This is it, gals. This rice recipe will be a yummy edition to your repertoire. It came with an easy chicken recipe, but I like the idea of making the rice with any entree- Chicken, Pork, Beef.
The coconut milk adds a richness and silkiness, but not overtly coconuttiness. Is that even a word?

Ingredients
1 (13.5 oz) can of coconut milk
1 tsp salt
1 cup uncooked brown rice or basmati rice
1 (15.5 oz ) can black beans, drained and rinsed
1/2 cup chopped red bell pepper
1/3 cup sliced green onions
1/4 cup chopped fresh cilantro
Instructions
Bring coconut milk and salt to boil over medium-high heat. Stir in rice. Cover and reduce heat to low and simmer per directions on brown rice or basmati rice packaging.
When rice is done, stir in black beans and green onions. Top with cilantro.
Serve with chicken or pork or beef.
Coconut Rice Variation ::
For a change of flavor, I often sautè veggies like onions, carrots and celery and then add into the rice at the end. Warm up some frozen peas with your veggies and pop in for added color.
