Easy Chicken and Dumplings

Here it is. An easy recipe for chicken and dumplings. Such a comfort food. Such a delight. I used to ask for this for my birthday dinner. This and Angel Food cake which had to be frosted. Yum.

Ingredients

1 whole Chicken cut into pieces- or you can use chicken breasts or thighs…really whatever mixture of chicken you have…

1 onion- peeled and cut into chunks
3 large carrots, cut into thirds or I often use baby carrots, as many as I want to add in
3 stalks celery, cut into thirds

You can add more carrots and celery if you like.
8 cups low sodium chicken broth

1 bay leaf 
salt & pepper

Instructions

  • Combine chicken, onion, carrots and celery, S&P, and Bay Leaf in a large pot.

  • Add chicken broth. Bring to a boil, reduce heat, and simmer covered 45-60 minutes or until chicken is tender. While broth is simmering, prepare dumplings below.

  • Remove chicken and vegetables from broth. Discard skin and bones and chop remaining chicken, set aside.

  • Gently add dumplings (see recipe below) to broth. Simmer 15-20 minutes or until tender, with the lid on.

  • Stir chicken and vegetables into broth and cook about 2-3 minutes or until heated through.

  • At the end to thicken the broth add in:

    1 tablespoon flour, 1 cup milk and 1/2 stick of butter.



Make the dumplings and roll out while you are cooking the chicken and let the dumplings air dry….

Dumplings

2 cups Pioneer Baking mix

1 egg

1/3-2/3 cup milk

Beat egg and add to Pioneer mix in a large bowl.  Pour in milk 1/3 cup at a time, until mixture forms a soft dough.  You want a soft dough, not sticky.  Knead a few times on a floured surface then roll to 1/8” thickness.  Cut dough into 1”x 2” strips.  Flour generously to keep from sticking.

I made these recently, and I give them my seal of approval. This site also shows you what it looks like when you roll them out and let them kind of dry out.

Here is a recipe for a gluten-free version. I had my roadie, Maureen, test these out and she said they were delicious.
