Easy Salad for a Weeknight Supper- Salad with BBQ/Ranch Dressing and Crispy Onions

We are all looking for that easy meal to prepare on the busy nights when we walk in, toss our handbag on the counter and open the 'frig wondering, "What is for Supper, tonight?"

I have an idea for you. Basically you need a few main salad ingredients which I am encouraging you to always keep on hand. And you improvise with the meat. If you have these eight ingredients at all times, you can whip this salad up in no time.

Lettuce. Bag of frozen corn. Can of Black Beans. Cheese. Container of Crispy Fried Onions.

And for the dressing you will need: BBQ Sauce. Ranch Dressing. Picante Sauce.

I encourage you to have these 8 ingredients at all times, so that you can whip this salad up in no time.

The Meat you use to top this salad is up to YOU! More details, below.

*And, please friend, do not leave these out of the recipe. You need these.

Crispy Fried Onions make a delectable topping for this salad. You can add as many of these as you like, and make sure and get them toasty in the oven right before you sprinkle them over your creation.

*Add any other veggies you like in your salad- tomatoes, carrots, cucumber, red onion, etc.

The meat option can vary. I usually use grilled mchicken. You can also broil it in the oven or pan sear it.

You could also use Flank Steak. Salmon. Ground Beef. Chef's choice.

With the eight main ingredients, extra veggies, and the meat of your choice, you can get supper on the table in 20 minutes with little or no stress.

Here is the Recipe:

Ingredients:

  • Head of lettuce or box of lettuce

  • 1 cup frozen corn, thawed

  • 1 can black beans, drained.

  • 1 cup shredded cheese; more if desired, for topping

  • 1/2 cup+ of French's Crispy Fried Onions

  • Meat- 2 grilled chicken breasts. Flank steak leftovers. Ground beef. Cooked Salmon

  • Ranch Dressing,

  • BBQ Sauce

  • Picante Sauce

Directions:

  1. Wash and tear lettuce for your salad and toss into a big bowl

  2. Add 1 cup corn, beans, 1/2 cup cheese to the lettuce and a little toss

  3. Now is the time to get creative- add whatever veggies you like carrots, tomatoes, cucumber, jicama, avocados. The sky is the limit!

  4. Cut meat that you are going to use and add in.

  5. Sprinkle with remaining cheese. Sprinkle More cheese if you like.

  6. Heat oven and crisp up the FF onions per the directions.

  7. Make the Dressing- equal parts Ranch dressing and BBQ sauce. Add in picante sauce to taste- make your dressing spicy or mild.

  8. Drizzle dressing over completed salad and toss

  9. Top with hot, crispy FF Onions.

  10. Serve immediately.

I often make all the parts of this and throw together when it is time to eat.

Serve with fresh Guacamole and Tostado chips.
