BBQ Chicken in the Instant Pot

For those of you who have a little fear about the Instant Pot. Dust that puppy off and make this tonite.

I have made this chicken several times the past few weeks. I love how you can cook super fast in the Instant Pot and then crackle crisp the chix in the oven for that just off the grill taste. Super easy. Good for a crowd or just your crew. I have used chicken breasts and chicken thighs.

Italian Farro Salad

A great side that can jazz up with whatever veggies you have on hand. I do love Farro. Make the farro in the Instant Pot or on the stove top. I kind of use this salad as a way to use up dibs and dabs of things like a half empty jar of olives or sun dried tomatoes... Everytime I make this, it comes out a little differently. Please be brave and improvise here.

Instant Pot Chicken Thighs

Y'all these are the best. Tender, juicy in a delicious gravy all made in the Instant Pot so hardly any dirty dishes. The Bear gave this recipe a thumbs up! When I searched for a pic of this, I remembered we ate it all up and didn't even take a pic- it was that good. I served with little, bitty new potatoes roasted in the oven and a big green salad.

Loved this Lemon Parmesan Salmon by HBH

The salmon is easy to cook and very flavorful. This recipe also has a little chickpea/corn/avocado salad that you serve with it which is a super easy prep and delish. Also, has some dollops of lemon juice/Greek yogurt sauce to pop over it. Bam, you are done and dinner is ready.

Pumpkin Bread

This Pumpkin Bread Recipe makes a perfect little Sursee for a Fall Breakfast, a Coffee Break or a Birthday Party Sursee to hand out to guests. I am making it again this week to wrap up and take to the neighbors for a little neighborly Fall Sursee.

The bread makes so much you can make a loaf for you and a bunch of mini loaves to share.

Fruit Bowl

I try to look and see what looks good in the produce section. Maybe Raspberries, Strawberries and Blueberries. Or maybe Grapes, Strawberries and Blackberries. Chef's choice. One of the ways to add a little Sursee to this is to half an orange and squeeze the juice right onto the fruit in your bowl. Adds a nice !Zing! to the fruit bowl that you will love.

Lady Di Egg Casserole

Pretty much a standard around here. This time I made it vegetarian style as we had some guests that prefer that. Still so good. Have you tried it yet?

Hot Roll Mix made into Sweet Rolls

I use the Pillsbury Hot Roll Mix to make 12 yummy sweet rolls. I follow the cinnamon roll recipe on the back of the box and bake in two cake pans or one 9 x13 pan. I bake the day before and cover with foil and warm up the day before. Or you can make a few days before and freeze and then I reheat the morning of your breakfast/brunch. I ice the cooked and warmed up rolls with a buttercream frosting which is approximately:

2 cups powdered sugar, a dab of milk, a few tablespoons softened butter and a dab of Vanilla.

Sausage Links and Bacon...I think you can do this by yourself....

Asiago Kale Salad in a bag

Y'all, this is a really easy addition to your Brunch. The sprightly lemon vinaigrette adds a delicious zip to the shaved brussel sprouts, radicchio and kale. I also love serving this salad and adding meat to it- maybe grilled chicken. Makes a perfect addition to a salad luncheon. Just pop open the bag and mix it up!
