What are you cooking up for breakfast this summer?  Sometimes we get in a rut or need a little inspiration.  I have a a great easy, protein filled, fresh breakfast. The Fry Up- named by our daughter in law!We are eating a little less carbs over here, trying to be so healthy in the new year.  One of the ways we are doing that is cutting out the carbs for breakfast and eating these Fry Ups!  A fry up is basically a meat, an egg, whatever veggies you have on hand, some cheese, and an avocado all on a bed of spinach.  All together a party and all so good together.Sometimes I make the meat ahead and save in the frig.  Think Bacon.  Sausage.  Ham slices.  Even Canadian Bacon.  Really anything Bacon is good, right? We have also used Turkey bacon and sausage.Then I sauté some veggies- think mushrooms, red peppers, onions, zucchini.  Whatever you have on hand. Saute and soften them.  Then I throw in the meat to warm it up.  I prepare a plate with a bed of spinach and if I am fancy, I will use arugula.  I love arugula's slightly peppery taste.Then throw the meat/veggie mixture on top of the greens.  Add some sliced cherry tomatoes and the avocado- either a half or slices.  Craig fries or scrambles an egg and plops it on top. Not me.  Not an egg gal.Last is a sprinkle of parmesan cheese.It all looks so delish, feels fresh and is good for us.  Helping us to curb our weight and keeping us feeling full through the busy morning.You can do this.  Give the Fry Up sursee  a try.

Ingredients

  • Cooked bacon slices

  • or ground sausage or canadian bacon or ham slices

  • 1/4 cup or a handful of spinach per plate

  • Mushrooms, sliced

  • Onions, chopped finely

  • Red pepper, sliced

  • Cherry tomatos, halved

  • Avocado, use as slices or halved

  • Parmesan cheese or any shredded cheese

  • 1 egg per plate, either scrambled or fried

Instructions

  1. Choose your meat and cook or warm it.

  2. Put a handful of spinach on your plate

  3. Top with the meat and the sautéed veggies

  4. Top with a little grated cheese

  5. Serve up!
