Up and Down Biscuits

Breakfasts together with others, whether friend or family, are fun.  And these are the times when I break out the special recipes.  The ones that take a little more time.  I have one for you today that you will love.  Not the most healthy, but hey, use this for those special occasion breakfast or brunch times.  These take a little while to make, so make yourself a cup of coffee and ask your guest to pull up a stool and mix up a batch of these Up and Down Biscuits. They are sweet, but not too sweet. And they are fun and portable.  Just the right size for a morning treat.  These also could be served with Lady Di's Egg Casserole.  Double yum.

I am going to walk you through some of the steps, because while not hard, these are a little different to make unless you are a Greek Yaya and you made pans of Baklava or some other stacking kind of treat.

The recipe is at the bottom but I thought you might like some of these photos to help you see how to prepare these.

Remember to divide the dough in half and work through these steps twice.

This is what the dough looks like when you roll it out into a rectangle that is 12" x 10".  See the ruler?   I get mine out and use it everytime.  And I love this silicone mat that the Bear bought me at Sur La Table.  It is dusted with a little flour to keep the dough from sticking.

Here is what it looks like when the dough is brushed with the melted butter, and I have sprinkled the rectangle with cinnamon and sugar. YUM!

Here is what it looks like when you start cutting into 2″ strips.  I lay the ruler next to it and measure and then cut the strips.

You can also see here that I have stacked the first strip onto the next strip until all five are stacked together.

Next you have them all stacked up and now you cut the stack into 2″ squares.

Here is what the squares look like when they are placed cut side down in the paper cups that are in the muffin tin.

Then you repeat the whole procedure with the second half of the dough and then bake.

Ingredients

  • 2 cups flour

  • 3 tablespoons sugar

  • 4 teaspoons baking powder

  • 1/2 teaspoon cream of tartar

  • 1/2 teaspoon salt

  • 1/2 cup shortening

  • 2/3 cup milk

  • 1/4 cup butter, melted

  • 1/4 cup sugar

  • 2 to 3 teaspoons cinnamon

Instructions

  1. In a bowl stir together flour, 3 tablespoons sugar, baking powder, cream of tartar and salt.

  2. Cut in shortening till mixture resembles coarse crumbs.

  3. Make a well in the center; add milk all at once.

  4. Stir till dough clings together.

  5. On a lightly floured surface, knead dough gently for 10 to 12 strokes.

  6. Divide dough in half.

  7. Roll one half of dough to a 12x10-inch rectangle.

  8. Brush with half of the melted butter.

  9. Combine the 1/4 cup sugar and cinnamon; sprinkle half over dough.

  10. Cut rectangle into five 12x2-inch strips.

  11. Stack the 5 strips on top of one another.

  12. Cut into six 2-inch squares.

  13. Place squares, cut side down, in muffin tins lined with paper cups.

  14. Repeat with remains dough, butter and sugar mixture.

  15. Bake in a 450 degree over for 10 minutes or till golden

  16. Serve warm

  17. Makes 12
