Cauliflower Soup

Here is a great soup for any evening or a lunch. Doesn't take long to prepare. No funky ingredients. Super smooth and yummy.

Don't forget to drizzle with the olive oil at the end- makes it look so elegant.

Ingredients

  • 1 head cauliflower

  • 1 large onion, sliced

  • 1 stick of butter, divided use

  • 1 bay leaf

  • 1 tsp nutmeg

  • 1 tsp each of salt and pepper

  • 4 cups water

  • Olive oil, for drizzling

Instructions

  1. Chop cauliflower into 1-inch pieces

  2. Melt half the butter in a saucepan

  3. Stir in onions and sauté until translucent, about 5 minutes

  4. Add chopped cauliflower, bay leaf, nutmeg and salt and pepper

  5. Sauté until spices are aromatic

  6. Pour in enough water to just cover cauliflower.

  7. Simmer until cauliflower is fork-tender, about 20 minutes

  8. Discard bay leaf.

  9. Use a blender or food processor to puree everything in the pot, adding remaining butter

  10. Simmer soup to thicken and season with S&P to taste

  11. Ladle soup into 4 bowls and drizzle with Olive Oil
