Hey gal!

It is almost time for Valentine’s. Wondering what to cook? Here are some ideas to help you if you are not wanting to get out this year. Or maybe pass this meal plan off to your sweetie or your kids and let them cook for you.

Halibut with Lemon Butter and Crispy Shallots

Made the fish for Christmas this year and it was easy and the lemony butter was wonderful.

Coconut Rice- leave the beans out!

I love coconut rice, rich and creamy but doesn’t taste coconutty. Make on the stove top or in the Instant Pot.

Roasted Carrots with Avocado and Yogurt

Ahhh, these are just the best; I keep making them, and they never disappoint. Can be made with multi-colored carrots or make them with baby carrots. Can. Not. Go wrong.

Another veggie to try is this recipe below that a friend just shared with me and said was deeLISH! She recommended adding Craisins or Dried Cranberries over the top at the end and you will get the Valentine’s Vibe!

Roasted Maple Brussel Sprouts, Bacon and Squash

For Dessert- Let’s splurge on an individual store bought treat for you and your sweet! That way you can pick out what you like and what they like. And you are not stuck with a giant dessert to eat and eat. Oh, wait… that does sound kind of fun! But not this year, gal. Go for the individual desserts! A tiny pie for you, a teeny cupcake for him. Or vice-versa. You get to pick.

Try the delightful French offerings at La Madeleine or shop at your Whole Foods or Central Market for a delicious treat.
