Breakfast for Dinner and Instant Pot Recipes

Hey gals,

I am excited to share some ideas for you for this week of cooking supper. This week I am going to give you a few ideas and let you fill in with some of your favorites.

Breakfast for Dinner

Y'all this is the best way to figure out what you are going to have- let's have breakfast for dinner. Gives you a break and the kids will say yahooooo! Here are some ideas for you that are some of my favorites.

Lady Di's Breakfast CasseroleOne of, actually the Best Breakfast Casserole, ever! You can add in whatever veggies you have or not. You can make in the afternoon and pop in the oven for a delightful meal. Add some muffins and a fresh fruit bowl and BAM! Supper is ready. Or, you could make the next item below to go with and win the prize for best cook everrrrr....

Up and Down Biscuits - A little labor intensive, but trust me, you guys will love these and they will become a family favorite. Each time you make, they get easier. Serve with bacon or sausage, maybe some scrambled eggs and fresh fruit. Let me know if you make these and if you have any questions.

A Yogurt Parfait- Take your special crystal glasses and layer yogurt, fruit, granola and elevate the everyday to the elegant. Your kids will love eating out of 'special glasses'. Add in toast with jam and a slice of bacon cooked in the oven. These parfaits might also be just what you need for an afternoon snicky-snack.

Grace's Banana Breakfast Bar- I learned this from one of my daughter in laws Take a banana and split it in half. Then layer the yogurt, fruit and granola, nuts, and slivers of coconut on the banana. Feels like you are eating dessert for dinner. Serve with pancakes or waffles or go easy and toast some thick bread, slathered with butter and jam. Voila! This dish would also be great for, yes, Breakfast!

BBQ Chicken in the Instant Pot

This recipe is such an easy meal to prepare. If you don't have an Instant Pot, you can bake or grill your chicken. But, seriously, I think you need an Instant Pot; there are so many wonderful meals you can prepare in it. I love how it has a sauté feature to give your meat the nice brown touch. For this recipe, the cooking happens in the Instant Pot and then you glaze it with BBQ sauce and put in the oven to crisp it up. I think this recipe works better with drumsticks and bone-in thighs, but you could also use boneless chicken breasts. You can also cook lots of chicken in the Instant Pot and put in the frig and later right before supper, slather with the BBQ sauce and finish it up.

Instant Pot Chicken Thighs

Made these last night and they were delicious. Super fast. Here is what I was talking about where you can sauté the thighs in garlic, butter and olive oil, right in the pot and then pressure cook it all.

And I loved that you also made the gravy in the Instant Pot right after you took the chicken out. The recipe calls for bone in thighs, but I used boneless, skinless thighs. They were super moist. The smoked paprika and oregano you sprinkled on the thighs looked so pretty when all browned up.

I served the meat with a green salad and steamed green beans. Again, this recipe shows you another reason why you might need an Instant Pot now.

Lettuce Wraps for the Win!

These Lettuce Wraps are so easy and yummy- you will feel like you are eating out at Pei Wei and your kids will say nom, nom. Let me know how you like them.
